This Iconic Restaurant Dishes Out the Best Hot Dogs in Colorado
A little over 45 years ago, Chicago native, Dan Polovin, noticed a void in Colorado that desperately needed to be filled – authentic, Chicago-style hot dogs. After moving to the Centennial State, Polovin met many other Chicago transplants who were also missing and craving these mouthwatering hot dogs from back home.
And with that, Mustard's Last Stand was born. The iconic restaurant was established in 1978 and has been dishing out delicious, Chicago-style hot dogs ever since. There are now locations in Denver and Boulder. Both sites have window service and casual indoor and outdoor seating.
The menu at Mustard's Last Stand offers numerous variations on the traditional Chicago dog, plus chili dogs, chili cheese dogs, corn dogs, hamburgers, and beyond. A proper Chicago dog is an all-beef frankfurter in a poppy seed bun, topped with yellow mustard, sweet pickle relish, chopped white onion, tomato slices, a dill pickle spear, pickled sport peppers, and celery salt. The beloved stand in Colorado only uses high-quality, Vienna Beef hot dogs.
Vegetarians can find plenty to nosh on here as well. In fact, Mustard's Last Stand has won several awards for its vegetarian hot dogs, and they even have a tofu reuben.
Every hot dog stand has its quirks and charms, and Mustard’s Last Stand is no different. In this case, Polovin put a Colorado twist on the Chicago-style hot dog stand and it was a winning recipe.
